Every prepared foods shop seems to have a carrot soup on its menu board, and I am often disappointed by their lack of personality. Carrot soup can be remarkably dull, or incredibly delicious, depending on how it's handled. Other vegetables, herbs, and spices can elevate the humdrum into the exceptional. Creamy Carrot Soup with Ginger and Curry Spices is a perfect example of this. Carrots are blended with leek, sweet potato, and spices to create a luscious and creamy soup that pairs beautifully with a grain pilaf, dark leafy greens, and a bit of steamed fish or glazed tofu.
