I have yet to meet a family that didn't enjoy muffins. There is something old-fashioned and comforting about the smell and taste of a fresh-baked, warm muffin for breakfast, brunch, or teatime snack. Healthy muffins needn't be uninteresting, and Quinoa and Apricot Muffins are no exception. They are scented with orange zest and hold a jam surprise at their center, with a sprinkling of pine nuts on top. Try raspberry or strawberry jam for a nice variation.
