The Provence region of southern France is the source of immense inspiration for me. As with many sun-filled regions of the world with good, tillable soil, Provence yields wonderful ingredients for simple, flavorful, aromatic foods. Provencal Style Sea Bass with Tomato, Dijon and Herbs is a dish inspired by years of good country French cooking in my step-mom's kitchen. Serve this dish with sunny saffron rice, baked sweet potatoes or tiny young red bliss potatoes, and sauteed greens or a big salad.
