Christmas is upon us, and people's traditions around what to serve for dinner are incredibly varied. Lamb, ham, suckling pig, goose, duck, capon, turkey and whole fish are all part of the landscape, as are a whole  array of beautiful vegan options.
Herb Brined Free-Range Organic Roast Turkey with Port Wine Gravy is a stellar dish if you are feeding a large group of people, and the same recipe can be used for capon, goose, or chicken. I love serving it with a scattering of ruby pomegranate seeds.  Lamb, duck, fish and a Roasted Vegetable Napoleon are all gorgeous with a drizzle of Red Wine Reduction Sauce.
