For those of us who are gluten sensitive or intolerant, finding desserts we can enjoy during the holiday season can be a frustrating challenge. Gluten-free baking is finally starting to reach a level of artistry that I find impressive at times, and that's a tall order for a classically trained chef like me. I must also confess that I don't particularly enjoy blending 6 different flours and powders to create a palatable baking blend. I'm busy, time is at a premium and I love simple.
