Rack of lamb is an easy, elegant entree for the holidays and can be adapted for 2 or 20 people without any problem. Besides being tender and delicious, lamb is also unique in that only about 1/3 of its fat is saturated. It's rich in zinc, iron, and B-vitamins. Grass fed lamb is, as with all the red meats, your best bet in terms of quality. Roast Rack of Lamb with Garlic and Herb Rub is a deceptively simple main dish. It is lovely served with a nice Pinot Noir Red Wine Reduction Sauce (get extra to drink!) or Mint Chutney.
