
For years now I have by-passed holiday baked goods because my gluten-sensitive system can't tolerate them. While I am sure I'm better off not eating all that baked flour, I occasionally miss a treat or two, and Mexican Wedding Cookies-also known as Viennese Crescents, Italian Butter Balls, Russian Tea Cakes, Snowballs or Polvorones-are amongst those I miss most. My mom made them when we were kids and that buttery, crumbly, and not too sweet melt-in-your-mouth explosion always reminds me of childhood. So a gluten free version insisted on making itself known this year, and I obediently obliged. Gluten-Free Mexican Wedding Cookies are as faithful a replica as I can create of the original. Enjoy!
