nullAsh-e reshteh is a traditional soup for the new year. Made of 4 legumes, noodles, greens and abundant fresh herbs, it is a deeply nourishing comfort food which is also celebratory in nature. It is used for the Nowrooz or norooz new year which occurs at spring solstice, but is also traditionally served on the first day of each month. This simple, inexpensive and deeply flavored Persian New Year's Legume and Noodle Soup (Ashe Reshteh) is a wonderful and warming way to start the year with friends.
