Making Spicy Black Bean veggie burgers or croquettes can be a time consuming process, but if you start with tempeh, the process can be dramatically simplified. Tempeh is a whole food protein made from soybeans and other beans or grains, and formed into cakes. It originated in Java and is a staple protein there. Tempeh is rich in plant protein, fiber and vitamins and is more nutritious than tofu.
Tempeh Veggie Burgers are zesty little patties that be served as an entrée or appetizer. Tempeh is mixed with onions, celery, cumin and herbs, and then lightly browned. The patties long for a dipping sauce, so I've included a recipe for Mock Tartar Sauce, a vegan version of the original that's seasoned with capers, cornichons, and herbs.
