Spicy Black Bean Burgers and Tempeh Patties with Mock Tartar Sauce

nullMaking Spicy Black Bean veggie burgers or croquettes can be a time consuming process, but if you start with tempeh, the process can be dramatically simplified. Tempeh is a whole food protein made from soybeans and other beans or grains, and formed into cakes. It originated in Java and is a staple protein there. Tempeh is rich in plant protein, fiber and vitamins and is more nutritious than tofu.

Tempeh Veggie Burgers are zesty little patties that be served as an entrée or appetizer. Tempeh is mixed with onions, celery, cumin and herbs, and then lightly browned. The patties long for a dipping sauce, so I've included a recipe for Mock Tartar Sauce, a vegan version of the original that's seasoned with capers, cornichons, and herbs.

Made these last night. I couldn’t wait to try them. I love tempeh and need some different ideas for it. The patties tasted cheesy and rich. I love them. I am not a big fan of cumin so next time I will cut down on that spice, but they were delicious. My daughter took the uncooked patties today for lunch as a sandwich filler which I thought was a great idea.
