Porcini Crusted Seitan with Mushroom Ragout

I'm covering the Almost Famous Chef competition and Kristen Thibeault, the winner of the New England regionals, broke rank and presented a vegan entree that pulled the rug right out from under her competition. The original dish was served with a celeriac puree and an apple celeriac salad with macadamia nuts. Those recipes are coming soon, but in the meantime I've adapted her Porcini Crusted Vegan "Sweetbreads" with Wild Mushroom Ragout for the home kitchen
