Chef Linnea Shumway won the Northeast regional competition of S.Pellegrino's 2013 Almost Famous Chef competition with this fabulous dish. A boneless chicken breast is topped with a chive scented shiitake mushroom stuffing, then bathed in a buttery and fragrant root vegetable sauce. I adapted the recipe for the home kitchen, and here it is. Congratulations Linnea!
