
Bolognese is a slow-cooked, delectable sauce that typically combines several types of meat for its most genuine incarnation. Problem is, I don't eat red meat, and I still occasionally long for a plate of pasta with the rich flavors of my Italian mother's kitchen. After much experimentation, and plenty of taste testing with my kids, I came up with Best Turkey Bolognese, an ode to my Mama Carla, to slow food, and to a healthier plate. Buon Appetito!
