Cleansing Carrots: Following the Ethnic Trail

border=The Mediterranean basin is a wonderful region for fresh salad recipes. Southern Spain, France, Italy, Greece and North Africa all contribute marvelous combinations of vegetables with fragrant herbs and spices.

Moroccan Spiced Carrots can be made as either a cooked or raw carrot salad and are seasoned with cumin, garlic and mustard seed. Middle Eastern Carrot Salad is slightly sweet, with mint and raisins.

Simple Provencal Carrot Salad is bursting with lemon and chlorophyll, and is a bright, palate cleansing salad.

All three of these salads have the wonderful cleansing and healing properties of carrots: they strengthen and heal the liver, lungs, and digestion, and offer an excellent dose of beta-carotene.
