This warming pear compote is delicious for dessert, a snack, or with oatmeal for breakfast. Try dressing it up with Walnut Cream and mint leaves for a simple but elegant finish to a fall dinner.

Total Time: 30 minutes
Ingredients:
- 4 Bosc or Bartlett pears, peeled, cut in half and cored
- 12 dried apricots
- 4 slices fresh ginger root, each about 1/4-inch thick and the size of a quarter
- 1 cinnamon stick
- 2 cups organic pear juice or cider (apple juice or cider may be substituted)
Preparation:
Place pears, apricots, ginger and cinnamon in a large saucepan and add juice.
Bring to a boil, cover, and reduce heat to a simmer. Cook 10 minutes, until pears are tender.
Remove pears to a bowl, increase heat to medium high, and cook apricots and juice an additional 5 minutes.
Discard ginger slices and cinnamon stick, spoon apricots and juice over pears, and serve.
Serves 4.
