Walnut Cream

By Jen Hoy, About.com

This dessert sauce is great with any cooked fruit, or with simple cakes. Other nuts can be substituted for the walnuts if desired.
Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients:
  • 2 cups walnut halves and pieces
  • 1 cup soy, almond or hazelnut milk
  • ¼ cup agave nectar or rice syrup
  • 2 teaspoons vanilla extract
  • Pinch of sea salt
Preparation:
Preheat oven to 325’.

Place walnuts in a single layer on a sheet pan or cookie tray and bake 10 minutes.

Place soymilk, agave, vanilla, and sea salt into a blender. Blend 10 seconds to mix, and add nuts.

Blend mixture until smooth. Chill for 30-45 minutes in refrigerator.

Makes about 2½ cups.
