This simple, homey, spiced apple crisp is at its best made with tart-sweet apples, or a mixture of the two. Jonathan, Northern Spy, Jonagold, and Pippins are all wonderful picks but can be hard to find, so I often mix tart apples with sweet ones to achieve the same effect. Braeburn, Fiji, Mutsu, Pink Lady, Winesap, MacIntosh, and Galas are all excellent sweet varieties. Granny Smith, Gravenstein, Macoun and Idared are excellent tart apples. The recipe is a healthy (and vegan) spin on an old-fashioned classic. By substituting gluten free flour in the topping and filling, and making sure to purchase oats that have not been processed in a wheat plant (these are marked gluten free), you can prepare a dessert that will make gluten sensitive individuals very happy! Serve this with Walnut Cream, or Vanilla Tofu Whip for a festive dessert.

Ingredients:
- For the Topping:
- 1 ½ cups old-fashioned organic rolled oats
- ½ cup maple sugar
- 1/3 cup whole wheat or gluten free flour
- 1 teaspoon ground cinnamon
- 1/8 teaspoon grated nutmeg
- Pinch of sea salt
- 2/3 cup chopped walnuts
- 5 tablespoons extra virgin olive or walnut oil
- For the Filling:
- 10 medium (about 3 pounds) apples, peeled, cored and sliced
- ¼ cup agave nectar or maple syrup
- 2 tablespoons lemon juice
- 1 tablespoon flour
- ½ teaspoon cinnamon
- 1/8 teaspoon grated nutmeg
Preparation:
Preheat oven to 375’F
Prepare the topping: Combine the oats, maple sugar, flour, cinnamon, salt and nuts in a mixing bowl. Drizzle the oil evenly over the mixture and stir until combined. Set aside.
Prepare the filling: Mix together the apples, agave, lemon, flour, cinnamon, and nutmeg. Transfer the mixture into a 12” round or 9x13” baking dish. Sprinkle the topping evenly over the apples.
Bake the crumble 40 minutes, or until the topping is golden brown and the apples are tender. Serve warm or at room temperature.
