This easy, whole foods raw recipe for fresh figs with almond cream is a healthy alternative to the classic Italian dessert of figs stuffed with mascarpone. Just remember that the almonds need to soak overnight (or a minimum of 8-10 hours) before using. The lime juice adds a lively, fresh burst to the sweetness of the figs.

Ingredients:
- 1 cup blanched almonds (or soak for 1 hour and remove skins)
- ½ cup water
- 1 tablespoon maple syrup or agave nectar
- ½ teaspoon almond extract
- 12 figs cut in half
- ½ lime
- Mint leaves for garnish
Preparation:
Soak the almonds in 2 cups of water for 8-10 hours or overnight. (Longer soaking yields a smoother cream). Drain and rinse the nuts thoroughly.
Place the almonds and ½ cup water in a blender along with the maple syrup and almond extract. Blend on high speed until creamy.
Divide the figs amongst 4 glass or ceramic dessert dishes, and top with a dollop of almond cream and mint garnish.
