Pressure cooked brown rice is a staple of the traditional macrobiotic diet. The theory is that pressure cooking intensifies flavor and preserves nutrients.
Keep in mind that this recipe will yield a fairly dry rice. If you want a sticky, moist rice, add a bit more water.

Ingredients:
- 2 cups short grain brown rice
- 3 cups of water
- 1/8 teaspoon sea salt
Preparation:
Rinse rice and place in pressure cooker along with salt and water. Stir.
Lock the pressure lid on the pot, and set the pressure to number two. Cook on low flame for 20 minutes.
Place a flame tamer or double thickness of aluminum foil under the pot. Turn the heat up to activate the pressure cooker. Cook for fifteen minutes under pressure.
Remove the pressure cooker from the heat. Open the pressure cooker after the pressure has subsided. Serve.
