These easy raw recipes are a great introduction to some of the possibilities of raw foods preparation. A few contain vinegar; if you wish to adhere to a very strict protocol, use raw apple cider vinegar or lemon juice as a substitute. <br>

The list includes drinks, entrees, side dishes and salads, as well as dessert. Bon appetit!

1. Mango Pineapple Green Smoothie

Mango, Pineapple Green Smoothie is a luscious and buttery smooth green drink that should be made with ripe mangoes in season and golden pineapple for best effect. You can add some Meyer or regular lemon or a bit of fresh ginger root for extra zest. Please remember to use organic produce in any green drink!

2. Heavy Metals Detox Smoothie

This green drink packs a nutritional wallop and is effective for helping move heavy metals out of the body. Make sure you always use organic produce for smoothies.

3. Ultra Green Smoothie

This potent green drink is full of liver cleansing greens, and is guaranteed to give you a pleasant rush of energy help and to move a sluggish digestive system. The banana is an optional addition for those who may not do well with a potent green flavor, as it “softens” the intensity of it. Make sure all of your ingredients are organic please!

Do not eat anything else for 30 minutes before and after this drink, so the body can absorb it.

4. Raw “Spaghetti” with Tomato Basil Sauce

This fresh and delicious raw recipe for “spaghetti” with tomato basil sauce is a wonderful summer dish and is perfect if you can’t bear the thought of turning on your stove. Delicate strands of zucchini are topped with a light tomato and basil sauce. Use a mandoline, julienne peeler or spiralizer (spiral slicer) to cut the “pasta”. If you don’t have any of these, a good, sharp peeler can do the trick to cut wide ribbons. Pick slender squash that are as uniform as possible, and preferably not the big thick ones, which tend to be spongy and full of seeds

5. Kohlrabi and Radish Salad

This crossover whole foods/macrobiotic recipe for kohlrabi and radish salad is a powerful medicinal dish: it increases circulation, dispels dampness, nourishes lung energy, and helps with digestion and lymphatic drainage. It is rich in Vitamin C and potassium, as well as fiber.

6. Mediterranean Marinated Kale

This quick and easy raw recipe for Mediterranean marinated kale includes red onion, sun dried (or fresh) tomatoes, optional olives, olive oil and lemon juice. The lemon and olive oil naturally tenderize the kale, and yield a fabulous side salad. This dish is wonderful in the spring and summer months, when our bodies naturally need more raw food.

7. Cucumber and Mint Salad

This quick and simple recipe for cucumber and mint salad is perfect for cooling our bodies on a hot day. Crunchy Kirby or seedless cukes with a bit of red onion and lots of mint make a perfect summer side dish. Cucumbers possess anti-inflammatory properties and are cleansing as well as moistening for the intestines, kidneys, and skin.

8. Cucumber and Seaweed Salad

This crunchy, Japanese-inspired, cucumber and seaweed salad recipe is great for warmer weather, when our bodies require extra hydration. Cucumbers are rich in silica, potassium, and fiber, and are cooling as well as hydrating for the skin. Seaweed is a rich source of essential minerals.

9. Cucumber, Tomato and Basil Salad

This cooling salad is a summer favorite. Cucumbers, tomatoes, basil, red onion and light balsamic vinaigrette make for an exceptional summer side salad that is even better served on a bed of arugula. Cucumbers are thirst quenching and anti-inflammatory; tomatoes are ultra-rich in lycopene. Basil is a potent anti-oxidant, and is believed to have anti-cancer and anti-viral properties.

10. Zesty Guacamole

This zesty guacamole recipe will not disappoint. As simple as guacamole is, there is a definite art to making a great one. Choose ripe but firm Haas avocados, which are rich in potassium, fiber, and beneficial fat. Guacamole is wonderful on a salad platter, served with tortillas and Salsa Cruda, or as a sandwich filling.
