Macrobiotic Sweet and Sour Red Cabbage Pickle Recipe Jody Hoy
This easy recipe for sweet and sour cabbage pickle is also slightly pungent. Cabbage is an excellent aid to digestion and helps purify the blood.

Prep Time: 51 minutes

Total Time: 51 minutes

Ingredients:

  • ½ cup apple juice plus ½ cup water OR 1 cup water mixed with ¼ cup agave nectar
  • 1 tablespoon tamari or shoyu
  • 1 tablespoon rice or balsamic vinegar
  • ½ of a small red cabbage, sliced thin (about 3 cups)

Preparation:

Bring apple juice, water, tamari and vinegar to a boil.

Add cabbage, and cook, stirring occasionally, for 10-12 minutes, or until cabbage is tender.

Let cool slightly and serve. Any leftovers will keep several days in the refrigerator.

Serves 6-8
