This easy recipe for sweet and sour cabbage pickle is also slightly pungent. Cabbage is an excellent aid to digestion and helps purify the blood.

Ingredients:
- ½ cup apple juice plus ½ cup water OR 1 cup water mixed with ¼ cup agave nectar
- 1 tablespoon tamari or shoyu
- 1 tablespoon rice or balsamic vinegar
- ½ of a small red cabbage, sliced thin (about 3 cups)
Preparation:
Bring apple juice, water, tamari and vinegar to a boil.
Add cabbage, and cook, stirring occasionally, for 10-12 minutes, or until cabbage is tender.
Let cool slightly and serve. Any leftovers will keep several days in the refrigerator.
Serves 6-8
