Carrot Miso Dressing Recipe

This silky dressing is made with cooked carrots, which have a softer texture and easier digestibility than raw ones. Sesame, ginger, and miso add zing. This sauce is great on vegetables, grains and salads.

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 medium carrots, sliced ¼ inch thick
  • 1/3 cup rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon miso paste
  • 1 teaspoon chopped ginger root
  • ½ cup spring water

Preparation:

Steam carrots for 12-15 minutes, or until very tender.

Place carrots in blender along with vinegar, sesame oil, miso, ginger and water, and blend until very creamy.

If the dressing is too thick, add water a tablespoon at a time until it reaches desired consistency.

This dressing will keep 5 days, refrigerated.
