Cook Time: 15 minutes
Ingredients:
- 2 medium carrots, sliced ¼ inch thick
- 1/3 cup rice vinegar
- 2 tablespoons toasted sesame oil
- 1 tablespoon miso paste
- 1 teaspoon chopped ginger root
- ½ cup spring water
Preparation:
Steam carrots for 12-15 minutes, or until very tender.Place carrots in blender along with vinegar, sesame oil, miso, ginger and water, and blend until very creamy.
If the dressing is too thick, add water a tablespoon at a time until it reaches desired consistency.
This dressing will keep 5 days, refrigerated.
