This recipe for zesty tahini sauce with garlic, lemon and cayenne is great on salads, steamed and raw veggies, baked or broiled fish, tofu, rice and sandwiches. In other words, it’s one of the most versatile sauces you can keep on hand. Tahini is rich in protein, polyunsaturated fats, calcium, iron, magnesium, and plant sterols.

Ingredients:
- 1/2 cup sesame tahini
- ¼-1/2 cup hot water
- 2 gloves garlic, chopped fine
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 tablespoon finely chopped Italian parsley
- Pinch of cayenne
- Sea salt and freshly ground pepper to taste
Preparation:
Whisk together the tahini and ¼ cup of hot water. If the mixture is too thick, add additional water 1 tablespoon at a time until it is thick but creamy.
Add the garlic, olive oil and lemon juice and whisk thoroughly. If necessary, add warm water until the sauce reaches desired consistency.
Add the parsley and seasonings to taste.
The sauce will keep, refrigerated, for about a week.
Makes about 1 cup.
