This zesty whole foods recipe for Dijon and herb tofu spread is rich with the flavors of herbs, sautéed onion, and mustard. It works as a sandwich filling, a dip, a spread for toast, crackers or bagels, and lends itself to being paired with any number of vegetables.

Ingredients:
- 1 tablespoon olive oil
- 1 small sweet onion, chopped
- 2 cloves garlic, chopped fine
- 1 block firm tofu
- 1 tablespoon light miso paste
- 1 heaping tablespoon Dijon mustard
- 1 tablespoon cider vinegar
- 2 tablespoons chopped fresh herbs (any combination of dill, basil, thyme, marjoram, oregano, cilantro)
- Sea salt and freshly ground pepper
Preparation:
Warm olive oil in a skillet over medium heat. Add onions and garlic, stir to coat with oil, and reduce heat to low. Cover the pan and cook, stirring occasionally, until onions are tender, about 7 minutes. Let cool.
Place tofu, miso, Dijon, vinegar, and onion mixture in a food processor and blend until creamy. Pulse in herbs and season to taste.
Makes about 2 ½ cups
