This awesome crispy seitan, lettuce and tomato sandwich recipe has earned the approval of hard-core meat eaters. Seitan is pan seared until crispy and layered with sliced tomatoes, lettuce and chipotle aioli on rustic bread. A BLT never tasted this good!

Total Time: 10 minutes
Ingredients:
- 1 tablespoon olive oil
- 8 ounces seitan, sliced 1/4 “ thick and patted dry on paper towels
- For the Chipotle Aioli:
- ¼ cup good quality mayonnaise
- 1 teaspoon finely chopped de-seeded chipotle chili
- 1 tablespoon chopped scallion
- 1 teaspoon lime juice
- To assemble:
- 4 rustic sandwich rolls, 4 whole wheat wraps, or 8 slices of rustic bread
- 4 romaine lettuce leaves or 4 cups baby lettuce
- 1 large beefsteak tomato, sliced
Preparation:
Heat olive oil in a sauté pan and fry seitan slices until crisp and golden brown. Let cool on paper towels to absorb any excess oil.
Blend together the mayonnaise, chipotle, scallion, and lime juice in a small bowl.
Spread the bread with the aioli, and layer with lettuce, tomato, and seitan slices.
