Ingredients:
- 4 medium sized beets, scrubbed, peeled (optional) and cut in quarters
- 1 tablespoon extra virgin olive oil
- 1 shallot, sliced thin
- 1 clove garlic, chopped fine
- 1 tablespoon balsamic vinegar
- 1 teaspoon chopped fresh rosemary or thyme (optional)
- Sea salt
Preparation:
Preheat oven to 375'Place a sheet of foil on a baking tray and loosely wrap beets, sealing the edges of the foil. Bake 20 minutes.
Open the foil. Add the olive oil, shallot, garlic, vinegar, rosemary and a pinch of sea salt to the beets, tossing well.
Bake an additional 15 minutes, or until fork tender.
