Savory Sautéed Kale

Cooking with olive oil and shallot softens kale's native bitterness. This is a simple, tasty way to get your greens with minimal effort and maximum benefit. Kale is one of the plant kingdom's superfoods and is rich in vitamins, minerals, and fiber.
Prep Time: 5 minutes
Cook Time: 7 minutes
Ingredients:
  • 1 pound kale, (about 1 bunch) stems removed, and leaves sliced 1” wide
  • 1 ½ tablespoons extra virgin olive oil
  • 1 large shallot, peeled and sliced very thin
  • 1 clove garlic, chopped fine
  • ½ cup vegetable stock
  • Sea salt
  • Sesame seeds for garnish (optional)
Preparation:

Wash kale thoroughly and drain but do not dry.

Heat a large skillet over medium high flame, add olive oil, and sauté shallot and garlic for 2 minutes.

Add kale and stock, a pinch of salt and cover, cooking for 5 minutes, or until kale is tender. Season to taste, sprinkle with sesame seeds and serve.

Serves 4
