Vegan Tapenade

While olives, capers, and lemons are not part of a traditional macrobiotic diet, all stand tall as foods that have great nutritive and healing value. Tapenade is an anti-inflammatory snack rich in iron, Vitamin E, quercitin and fiber.

Prep Time: 10 minutes

Ingredients:

  • 2 cups pitted black or green olives
  • 1 small clove garlic, chopped
  • 2 tablespoons capers (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped flat leaf parsley

Preparation:

Thoroughly rinse the olives in cool water.

Place olives, garlic, capers, lemon and olive oil in the bowl of a food processor. Process to combine, stopping to scrape down the sides of the bowl, until the mixture becomes a coarse paste, approximately 1 to 2 minutes total.

Stir in chopped parsley.

Transfer to a bowl and serve.

Makes two cups.
