Total Time: 15 minutes

  • 1(1 pound) block extra firm organic tofu, cut in half lengthwise
  • Sea salt and freshly ground pepper
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons untoasted sesame oil
  • 1 pound green beans, stems removed
  • 1 large clove garlic, chopped fine
  • 1 tablespoon finely chopped ginger root
  • ¼ cup water
  • 1 tablespoon tamari
  • 1 chopped scallion, for garnish

Wrap the tofu in paper towel, weight between two plates and press out excess water.

Add the green beans, garlic and ginger to the pan and sauté, stirring frequently, for two minutes. Add the water, cover, and steam the green beans for 3 minutes until tender.
Add the tofu and tamari, toss quickly, and serve, garnishing with chopped scallions
