This simple recipe for green beans sautéed with ginger, garlic, chili and mint is delicious anytime, but also makes a festive side dish at a holiday table. If you don’t like spicy food simply omit the chili.

Cook Time: 6 minutes
Total Time: 11 minutes
Yield: 4-6 servings
Ingredients:
- 2 teaspoons olive or sesame oil
- 1 large clove garlic, chopped fine
- 1 tablespoon finely chopped ginger
- 1 small red chili, crumbled
- 1 pound green beans, stems removed
- Large pinch of sea salt
- 1/3 cup water
- 1/3 cup chopped fresh mint
Preparation:
Heat olive oil in a sauté pan over medium heat. Add garlic and ginger and chili, stir one minute, and add green beans.
Stir one minute, add salt and water, cover, and cook for 4 minutes or until beans are tender and water is evaporated.
Uncover the beans, increase the heat, and cook one more minute.
Gently stir in the chopped mint and serve hot or at room temperature.
