This light and delicious salad has a wonderful, vibrant living energy and is best eaten the day it is made. As the kale marinates it tenderizes, but do try to choose younger, smaller leaves, as they are easier to digest. I love this when I’m feeling tired or like I haven’t been eating well enough, as it instantly perks me up. Kale is a superfood, full of vitamins, minerals and fiber.
Yield: 3-4
Ingredients:
- 1 bunch young kale, stems removed, cut into ½ inch wide strips
- ½ small red onion, sliced thin
- ½ cup dried cranberries
- 1 tablespoon lemon or 2 tablespoons orange juice
- 1 tablespoon olive or untoasted sesame oil
- 1 teaspoon finely grated ginger root
- Sea salt to taste
Preparation:
Toss the ingredients together thoroughly in a mixing bowl. Season to taste.
