This delicious recipe for sweet potatoes with maple, orange and pecans is fabulous for a holiday feast and also happens to be vegan. You’ll never miss the butter or brown sugar! Choose smaller sweet potatoes for best texture.
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Yield: 8 servings
Ingredients:
- 8 small garnet or jewel sweet potatoes, peeled and cut into wedges
- ¼ cup maple syrup
- 3 tablespoons olive oil
- 1 teaspoon grated orange zest
- Sea salt and freshly ground pepper
- 1 cup pecan halves
Preparation:
Preheat oven to 400’F
Toss the sweet potatoes with the maple syrup, olive oil, zest, salt and pepper in a large baking dish.
Cover the dish and bake the potatoes for 15 minutes.
Uncover the sweet potatoes, stir, and cook 25 minutes more, stirring occasionally. Add the pecans to the dish and bake 10 minutes, until the wedges are tender and beginning to turn brown.
