This is as simple and as delicious as food gets. Baby new potatoes, a bit of olive oil and sea salt are all that's needed for a perfect, sweet little nugget of goodness. Serve these little wonders as a side vegetable or on salads.

Cook Time: 20 minutes
Total Time: 21 minutes
Ingredients:
- 1 pound baby new potatoes
- 1 tablespoon good olive oil
- 2 pinches of sea salt
Preparation:
Preheat oven to 425'
If potatoes are in various sizes, cut them into 1-inch chunks. (Otherwise leave whole). Toss potatoes with olive oil and salt, and spread on a baking tray. Roast for 20 minutes, until fork tender. Serve hot or room temperature.
Serves 4-6
