This zesty guacamole recipe will not disappoint. As simple as guacamole is, there is a definite art to making a great one. Choose ripe but firm Haas avocados, which are rich in potassium, fiber, and beneficial fat. Guacamole is wonderful on a salad platter, served with tortillas and Salsa Cruda, or as a sandwich filling.

Ingredients:
- 2 large Haas avocados, cut in half, and pitted
- 1 scallion, chopped fine
- 1 jalapeno pepper, seeded and chopped very fine
- 2 tablespoons chopped cilantro
- 2 tablespoons lime juice
- Sea salt and pepper to taste
Preparation:
Scoop avocados into a small glass or stainless steel bowl, and cut into rough chunks with a dinner fork or knife. Add scallion, jalapeno, cilantro and lime, and gently mash the mixture with a fork. Season to taste. If the guacamole is not being served immediately, carefully cover with plastic wrap, pressing down onto surface so that no air enters to cause oxidation (discoloration), and store, refrigerated, until ready to use.
